Notes: Add 2.3 gallons (9.2 quarts) of 167°F strike water to grain, hold at 152°F for 60 minutes. Add 182°F water to raise temperature to 165°F and recirculate. Slowly sparge grains with 168°F water and collect the wort in the boil kettle.
Skim off any foam or film on the surface of the water before adding hops. Once the wort is boiling, add the Chinook hops and start a timer for 60 minutes. Add Chinook hops and Irish moss at 15 minutes. Add Simcoe and Amarillo hops in the whirlpool at flame out.
Pitch yeast and after fermentation is complete add Simcoe and Amarillo hops to the fermentor for 3 days.

Add wort and yeast to primary fermentor with a blow-off hose, transfer to secondary fermentor and dry hop once primary fermentation is finished.
