To brew this Kentucky Breakfast Stout clone, perform an infusion mash at 155°F (68°C) for 60 minutes. Boil for 90 minutes, adding hops, chocolate and coffee as specified. Ferment for two weeks at 65°F (18°C). Soak 0.25 oz (7 g) toasted French oak chips in 1 cup (237 ml) Kentucky bourbon for two days. Soak ground Kona coffee in 1 cup (237 ml) boiled, cooled water and leave overnight, covered, in refrigerator. Strain out grounds and add cold-brewed coffee, bourbon and wood chips to sanitized secondary. Rack fermented stout onto this mixture and condition in secondary at 5560°F (1316°C) for 2 to 6 months.

Weyermann Cara Munich type three 450 g
Weyermann Acidulated 200 g
Hops
Simcoe @14%aa (leaf) at boil addition 140 g
Nugget Wet Hops First Wort 50 g
Nugget Wet Hops 20 minutes 900 g
Nugget Wet Hops Whirlpool 900 g
Nugget Wet Hops Hop Blocker 50 g
Added 55g of calcium chloride at mash in
Mashed into 53 L of water for a one hour rest at 66 C
Brought up to 76 C before vorlaufing
Ran off to 90 L and 13 P pre-boil.
Boiled vigorously for 60 minutes.
Cast out volume was 78 L at 14.8 P. Wet hops will absorb a significant volume of wort.

Scrape the pulp from watermelon rind into a blender to get about (2L) of pulp. Puree the pulp for about 30 seconds then add it to the primary fermenter (plenty of head space)
Fermentation of the fruit sugars should be complete within 1-3 days and the beer can be transferred to secondary. Let sit for one week, add Gelatin (optional) and cold crash for 3 days. Remove to warm up overnight, prime and bottle. Condition 21 days. Chill overnight...enjoy! Great beer!
