Notes: I still feel this recipe is in experiment phase. I will try different ABV levels, different IBU levels etc.. I have now two beers done with this recipe, with changes to these levels. Both came out nicely.
This recipe is braking all the laws of beer and gose history. It has coriander, salt and the grain bill is very much right. But in the hop game all the laws are broken and also this recipe is high ABV. You can of course adjust your recipe lower abv. The hop game in this recipe works very very well, only compliments received. End product has very distinct pineapple / lemon flavor.
Dry Hops added 7 days before bottling.
Last addition of Wai-ti is added as a dry-hop 1 day before bottling, durin the cold crashing.
Optional for clear beer: Fermenter is cold crashed 3 days before bottling and cleared with gelatin. |
