Notes: Smoke. Peat. Vanilla. Leather. Bourbon. This beer is all about settling into fall in Appalachian style. This beer wears flannel and smokes a pipe. One rule: ALL ingredients are American-sourced.
Believe it or not, work began on this beer in Spring 2019, as it will be our first foray into using oak chips to add some real character to the brew. Based on cursory research, the shining star of this brew will be Medium Toast American Oak cubes, soaked for a few weeks in some Jack Daniels to mellow it out, and then 4 months or so in an American Small Batch Bourbon TBD.
