Notes: 9/29/19
Had a hell of a time with the mash. strike temp was 150-->138-->goosed it for about 20 min, then over shot it to 156, hit it with ice cubes and water-->139 then goosed again to 153 and held pretty steady for ~2 hours (dealing with stuff around house)
Used yeast cake from red october 2 and pitched wort on top of yeast leftover from last brew
cooled to 54F then pitched into 55 degree fridge
aerated wort with splash drill for 3 min prior to pitching
1.054 OG after adding some water back
9/30/19: 6am bubbling at 1/sec--> wow. 55F spot on.
10/2/19: bubbling only every 9 seconds--> gravity read shows 1.015--> opened fridge for D rest 68F
10/3/19: only bubbling every 18 seconds, sample has strong sulfur rotten egg character that hopefully should be cleared up with conditioning phase. gravity 1.014 and likely FG if not very close
so spot on 5.25% abv very similar to sam octoberfest (I think sams FG was 1.012 this year)
10/10/19: 8 days after D rest at 69F, gravity is 1.012-->transferred to keg and added 1/2 tsp gelatin
10/13/19
sampled: still has haze to it... by no means clear or bright yet... still has a sulfur like note to it that I hope vanishes with lagering. body is VASTLY superior to the other version that finished at 1.006 (that just let no finish whatsoever and no lingering malt character which is nice)
head: oddly pouring with little/no head which is common early on... hopefully it kicks in and pours better head later on
I think next time I would go even higher on the specialty malts and may even include victory malt as that is supposed to punch up the malt character quite a bit...

Taste test: No more sulphury character. Head was phenomenal and small bubbles and creamy. Taste was absolutely spot on. very crisp and malt forward. significantly more clear than what i can remember. Not bright but headed in that direction. This is gonna be a winner come xmas. just a really solid beer.

opened keg-->added 3 tsp biofine clear + 1/8 tsp of k meta--->began to stir with tripod-->foamed up really quickly and foamed over-->capped as soon as possible-->purged keg 15 times |
