Melanoidin is a kilned specialty malt that helps promote flavor stability, add body, and produce a smooth mouthfeel. With an intense malt aroma and unique brewing characteristics it has a high degree of modification of both proteins and starches, excellent friability, low ß-glucan values, and high acidity. Melanoidin malt adds a deep amber to red-brown color to your finished beer. With rich malt flavor having notes of honey and biscuit, Melanoidin malt is best used in dark or red-colored beers such as amber ales, Scottish ales, Irish red ales, bocks, and Kellerbier.

So what does that mean? Melanoidin Malt helps improve the red coloration and intensifies malt flavors in your beer.

The German Perle hop was originally released in 1978 the same year brewing became legal in the United States. Due to a clerical omission wine making had been legal for sometime, but not beer. Fact! 

Perle hops offer a sweet, slightly fruity, slightly spicey aroma and flavor.

These hops are a cross between New Zealand (2/3) and Saazer (1/3) breeding selections. The main use of Motueka is for aroma, with a strong note of lemon lime and tones of tropical fruit. Some hops that display similar characteristics are Saaz and Sterling, and they are most commonly used in ales. These hops provide both unique aroma and flavor from the beginning additions of your boil to the end.

Chondrus crispus, otherwise known as Irish Moss, is a carrageen seaweed used to clear beer and combat chill haze without the use of a filter. It promotes protein coagulation speed and is added to your boil 15 minutes before completion. Be sure to hydrate for at least 15 minutes before use.
