Biscuit Malt is aptly named. Contributing a warm bread/biscuit flavor and garnet brown color, this malt must be mashed with other malts containing an excess of diastatic power. Use 5-10% max.

A 5 oz portion is ideal for most 5 gallon batches, but it has other purposes as well. You can also use it to boost your ABV without affecting flavor much by adding it to your boil before fermentation.

Bred from Norther Brewer and English Golding stock, Target is an excellent bittering hop with a classic English character. While typically used for its high alpha percentage, this hop has gained some popularity for its aroma as well.

UK Challenger Hops are a dual purpose hop variety owing it's lineage to Northern Brewer Hops. Used for bittering as it has a spicy, woody aroma and flavor, look to use these hops in English Ales, some styles of American IPAs, as well as early/late kettle hopping.

A great cask conditioned ale strain that produces distinctly malty beers, Wyeast London ESB Ale 1968 Yeast is an extremely flocculent strain that finishes sweeter than most based on it's attenuation level being lower. You will need to rest this beer due to the diacetyl, but after the rest you should be able to produce a bright beer with no filtration. Ales produced with Wyeast London ESB Ale 1968 Yeast tend to be fruity with the fruitiness increased as the fermentation temp increases, 70-74°F (21-23° C).
