Great for abbey styles, porters, and dark ales, basically beers with depth, it taste of toasted marshmallows, moderate coffee, and dark dried fruit like prunes. Caramel 20L is a light crystal malt made with 6-row barley. It imparts a golden color, candy-like sweetness, and mild caramel flavor. Crystal malts also add body and improve head retention. Usage is progressive, starting light to balance pilsners and reaching the maxiumum 15% to impart color and sweetness to darker ales, stouts, and porters.
Crystal malts are gently cooked during the malting process. Cooking initiates the enzymatic conversion of starches into fermentable sugars, and caramelizes some of the sugars as the malt reaches its final color. This eliminates the need to mash crystal malt, and ensures that some of the sugars will survive fermentation to sweeten the beer. Briess caramel malts are roaster produced to create glassy, crystallized sugars with rich flavor and color.

Contributing sweet pronounced caramel flavors to your beer, 2 Row Caramel 60L is a medium crystal malt made with 2-row barley. It imbues a deep gold and reddish hue while improving body and head retention. The more you use the more depth of color and caramel flavors come out, so us this at max 15% of your overall grain bill. Substantially less for a balanced Pilsner.

Gently cooked to bring out the crystallized sugars sweetening your finished brew, 2 Row Caramel 80L Malt imparts a deep red color and balanced burnt sugar and raisin quality to your dark ales, porters and stouts. It can be used lightly in a pilsner to impart a deep richness, but is most typically found in darker styles.

2 Row Caramel 120L is dark. Not Tarantino dark, but still pretty dark. The more you add (up to 15%) the more burnt sugar, caramel, and raisiny and prune flavors you're going to get from it while adding a deep red color and improving body and head retention.
It is gently cooked during the malting process to produce glassy, crystallized sugars which will add sweetness to your final product.
