Aromatic Kiln is a strong malt by most measures. Providing a strong malt aroma and deep malt coloring as a product of it's kilning you can use Aromatic Kiln for up to 30% of your grain bill, but it is on the low side of diastatic enzymes (one of the enzymes converting starches into sugars so the yeast can convert those sugars to booze!) so most prefer to use it as a specialty malt aiding in styles like Ambers and Reds to get the darker coloration.

Caramel 20L Malt

Product Description

Caramel 20L is a light crystal malt made with 6-row barley. It imparts a golden color, candy-like sweetness, and mild caramel flavor. Crystal malts also add body and improve head retention. Usage is progressive, starting light to balance pilsners and reaching the maxiumum 15% to impart color and sweetness to darker ales, stouts, and porters.
Crystal malts are gently cooked during the malting process. Cooking initiates the enzymatic conversion of starches into fermentable sugars, and caramelizes some of the sugars as the malt reaches its final color. This eliminates the need to mash crystal malt, and ensures that some of the sugars will survive fermentation to sweeten the beer. Briess caramel malts are roaster produced to create glassy, crystallized sugars with rich flavor and color.

Special B is the darkest of the dark malts from the land of all things beer, Belgium. Producing dark fruit flavors akin to raisins, cherries, ans plums, this is a great malt to use in lower percentages. Less than 5% will provide an excellent color addition while greater than 5% will contribute a dark black/brown color and fuller body.

Sterling is an aroma variety that was bred from Saaz and a number of other varieties. It has herbal and spicy aroma notes with a hint of floral and citrus. Sterling is perceived to be similar to a combination of Saaz and Mt. Hood, and many brewers use it as a replacement for Saaz. It is typically used in Pilsners and Lagers, as well as Belgian-style Ales.
