Weyermann Pale Wheat malt is an ideal foundation grain for continental wheat beer styles like Hefeweizen and Kristallweizen, and an essential ingredient in North American wheat ales. It adds very little color to wort but contributes a robust, malty-sweet flavor with notes of bread, nuts, toffee, and light caramel.

Wheat malts are high in protein, which helps produce fuller-bodied beers. Wheat malt can also improve head formation and retention, depending upon the other grist constituents. In top-fermented beers, Weyermann® Pale Wheat malt performs especially well, adding creaminess, body, and complex wheat flavors.

Bramling Cross has a very distinctive 'American' aroma. It is often used as a general-purpose kettle hop for a small proportion of the hop grist. However, the variety has also been used to provide a special fruity character in traditional ales, adding blackcurrant and lemon notes. If used as a late hop or dry hop, the affect on the final beer flavor can be very interesting. This is an under-appreciated hop that affords the brewer considerable scope for experiment

Nottingham Beer Dry Yeast is highly flocculant and has relatively full attenuation properties. It has a high alcohol tolerance and is great for specialty beers. It creates low concentrations of fruity and estery aromas, and is considered neutral as an ale yeast, allowing the full natural flavor of malts and hops to develop. 

Recommended Fermentation Temperature: 14° to 21°C (57° to 70°F) with a good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer.
