2 of the gallons of water that I used were in my garage for like 5 month but otherwise no memorable issues.
Oh wait no, I put the grain in at 120 degrees and let it heat up with the water, the water ended up hitting 175 then I cut the heat off and let it steep back down to 150. Total steep time was closer to 40 minutes
Water is the UV cleaned water from Meijer
I popped the smack pack the day before.
